In samosas, a mortar prepared with a meat product or a kind of Indian cheese called ‘panir’ can be used, as well as vegetable main products, which are mostly preferred in vegetarian cuisines. In addition to recipes such as potatoes and peas, samosa with pumpkin is also consumed with great pleasure. PUMPKIN SAMOSA INGREDIENTS
* 1 large finely chopped onion

  • 4 tablespoons of sunflower oil

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • 1 teaspoon of turmeric

  • 1 teaspoon ground pepper

  • 350 g pumpkin

  • 200 g of sweet potatoes

  • 270 gr package phyllo

If you want to make the dough yourself;

  • 3 cups flour

  • 1 glass of water

  • 2 tablespoons of olive oil

  • 1 teaspoon salt

  • 1 teaspoon of cumin seeds

Dough making:

  • First, flour, salt, cumin and oil are taken into a mixing bowl and mixed thoroughly.

  • Afterwards, water is added and kneaded thoroughly and rested for 20-25 minutes.

  • The dough is divided into small balls.

  • It is opened in medium thickness and cut in the form of a cone in the middle.

* Peel the skins of the onion and finely chop it.

  • Put half of the oil you will use in the pan and fry the onions here until they soften and turn color.

  • Add the spices and mix on low heat for 1 minute.

  • Wash the pumpkin thoroughly, peel, core and chop.

  • Add the pumpkin and sweet potato to the pot and stir.

  • Add 200 ml of water, cover and cook for 10 minutes or until soft.

  • Remove the lid and cook until almost all the liquid has evaporated.

  • Preheat the oven to 190C/170C. Line two baking trays with greaseproof paper.

  • Divide each piece of dough in half to make two long strips.

  • Put one on a counter and lightly brush with oil.

  • Cover the remaining part with a clean, damp cloth so that it does not dry out.

  • Put 2 tablespoons of pumpkin mixture on one end and fold the corner to make a triangle.

  • Then fold it again in the opposite direction. Continue folding until the entire strip is gone.

  • Put on a baking tray and grease it.

  • Bake for 20-25 minutes, until golden brown.

  • Serve hot or cold.
